Truffles

This week the kids and I are going to be making some Christmas goodies for our neighbours. We've just recently moved into the area and we already have had a friendly welcome from those living nearby. There are a coupe of recipes that we're going to experiment with, one of them being my mum's tried and trusted truffles. These are yum, not to rich and are very easy to make....

Ingredients
1 Large flan case (to crumble) the kind you put fruit in and some jelly
1 small tin of carnation milk
16 ozs icing sugar
3 ozs ground almonds
8 ozs cooking chocolate
3 tsps brandy, rum or essence
1 tsp almond essence

Method

Melt chocolate over heat
Crumble flan case and add icing sugar and ground almonds in a bowl
Add all the essence and then add the cooking chocolate
Mix altogether and leave to stand for about 15 minutes until it starts to firm
Roll into balls and cover with either vermicilli or fine coconut.
Usually makes about 50
